Valentine's Supper for 2 

 

Comfort food can be scrumptious and nutritious.

 

Love this tray baked cod which is so easy and all baked in one pan, so very little washing up and it looks very impressive, I serve it to my retreat guests.

 

Firstly I bake the diced potatoes, aubergine & sliced onion with a sprinkle of cumin for about 20 minutes then add mushrooms, tomatoes and broccoli, with the cod lightly covered with harissa and bake for a further 20 minutes - yummy!
