Chickpea, Tomato & spinach stew
Yummy, simple and can batch cook for the freezer, makes 4 mains but can also be a side dish
Ingredients
Oil for pan
1 onion sliced
3 garlic cloves chopped
2 tsps ginger grated
1 chilli chopped
1 tsp cumin
1/2 tsp turmeric
1 tsp sea salt
Black pepper
1kg cherry tomatoes halved
2 tins chick peas drained
300g fresh or frozen spinach
I serve with greens and/or freshly made wholemeal seeded bread
Fry, I use my wok, onions, garlic, ginger, chilli & salt until onions are soft
Add chick peas, a cup of water, cumin, turmeric & black pepper cook for 5 mins
Add tomatoes cook for 2 mins
Take off the heat and add the spinach
