My first batch of sauerkraut for our wellbeing retreat guests.

Fermented foods such as sauerkraut or kefir are packed with good bacteria that are essential for gut health. Good gut health may sound boring but it is important for a healthy immune system and may also be a factor in mental health.

To make sauerkraut all you need is a white cabbage, salt and water but you can vary it to your taste with caraway seeds, red cabbage or carrots. Top tip don't overfill your jars and open them regularly as the fermentation process can be explosive!
