Grate! No need to cook, try grating raw beetroot, courgette and carrot for a delicious, colourful and nutritious salad. I serve mine with olive oil and lemon juice and some black pepper.

Here at our wellbeing retreat we try to vary our meals with the seasons and what our vegetable patch has.

Sadly the rocket is off the menu, some wee beastie ate it!
